Chocolate and Raspberry ,hazelnut slice
This is a very decadent dessert . It has a hazelnut daquoise base(a meringue with ground hazelnuts folded in and baked until light and crispy). The base then has a dark chocolate cream chantilly piped on top with fresh raspberries another layer of chocolate chantilly and finally topped off with a dark chocolate plaque. Chocolate and raspberries are a great pairing and this makes a wonderful dessert for a special occasion or in this case for a customer who ordered for a New Years Eve party.

Here are some desserts I made for an order for New Years Eve party. From the left hand side is a Chocolate Raspberry Hazelnut slice, opera cake and selection of cookies.
Opera Cake
Here is the opera cake I amde recently,which I cut into petit four size which is perfect for a buffet at a Wedding , Anniversary or other special event. The opera cake is made up of layers of a light coffee flavoured buttercream, dark chocolate ganache , between each layer is a thin layer of almond biscuit which is soaked in a coffee syrup. All this gives a perfect combination of a coffee and chocolate dessert which is a perfect combination.
